Vegetable salads are very beneficial for the human body. As a rule, vegetables contain a huge amount of vitamins. Beets are no exception, as they contain vitamins: C, B and BB, trace elements and minerals. Therefore, salads from fresh beets are so necessary for a person.
Fresh beet salad recipe
For cooking you will need:
- 1 large carrot;
- 1 large beet;
- 1 thick celery stalk;
- a small bunch of parsley.
For salad dressing:
- 1 tablespoon lemon juice;
- ¼ glass of olive or vegetable oil;
- 1 teaspoon of ground ginger;
- 1 tablespoon of apple cider or rice vinegar;
- 1 teaspoon of turmeric;
- black pepper and salt to taste.
In this salad, the main vegetable is fresh beets, so you need to add more of them than other vegetables. It can be grated on a coarse grater, chopped into narrow strips, or made into thin noodles using a Korean salad grater. The main thing is that the beets are finely chopped.
Carrots need to be cut in the same way as beets, as they are similar in taste and texture. But putting it in a salad costs a little less.
The celery must first be cut in length into 2 halves, and then chopped into half rings, you can even crush the vegetable a little by hand.
Greens do not need to be cut very finely. Parsley can be substituted with mint, celery leaves, or basil.
In a deep bowl, mix vinegar, lemon juice, sugar and salt, crushed ginger and all other spices. Then pour in any oil: olive, vegetable or sunflower. It is desirable that it be odorless. Vinegar can be substituted with a little more lemon juice.
Stir the vegetables and pour over the resulting dressing. Salt if necessary. Since the vegetables are fresh, the salad will be full of vegetable juice, but this is not a minus, there will be several times more vitamins in it.
The salad can be served with any dish; it goes well with meat, fish, and any side dishes.
Herring and beet salad
For cooking you will need:
- 1 boiled beet;
- 150 g of champignons;
- 150 g of herring, preferably lightly salted;
- a tomato;
- large red onions;
- 150 g mayonnaise;
- 2 boiled eggs;
- a small bunch of greens: lesson and parsley;
- 1 teaspoon of butter;
- salt, black allspice.
To prepare the salad, you need to wash the mushrooms and cut them into small cubes. Then simmer them in butter, pepper and salt. In the meantime, the mushrooms are cooling, you need to cut the onion, beet and tomato into small cubes. Season them with pepper and salt. Now you need to finely chop the eggs, herbs and herring.
The salad can be served in layers, or you can simply mix all the ingredients. If you put a vegetable salad in the refrigerator for a couple of hours, its taste will be much richer.
