Recently, not simple soups, but mashed soups, or, as they are also called, cream soups, have become especially popular in restaurants. They have a delicate flavor and rich aroma and are easy to prepare.

- - 7 glasses of milk
- - 3 chicken eggs
- - 3 tbsp hard cheese
- - 5 onions
- - 1 glass of cream 10%
- - 2 tablespoons butter
- - salt
- - ground red pepper

Step 1
Take eggs and separate the whites from the yolks. You only need yolks for cooking.
Step 2
Peel the onions, chop finely and fry in butter. Wait until the onion is soft and remove from heat.
Step 3
Pour milk into a saucepan, add fried onions, boil and simmer the mixture over low heat for about 4 minutes.
Step 4
Use a frequent sieve to wipe the mixture, then put the contents back in the pot, salt to taste, and boil again.
Step 5
Grate the cheese on a fine grater, then combine it, cream and egg yolks. Add the resulting mixture to the boiled soup, toss in a pinch of red pepper and stir thoroughly.
