Step 1

The meat of the giant Far Eastern squid cannot be cooked without preliminary processing, since untreated it will exude an ammonia aroma, will have a sour-bitter taste and a rubbery consistency. Squid fillets must first be soaked in a solution of soda, for this we place fillets of any size (can be frozen) in a saucepan of water, for each liter of which a teaspoon of baking soda is added. You need to soak for several hours, you can leave it overnight.

After soaking, the giant squid fillets should be cooked for about an hour. The water can be left unchanged, or a new soda solution can be made in the same proportion. During cooking, a lot of protein foam will form, like from eggs that have burst during cooking, so you need to constantly remove it with a slotted spoon. Then the water needs to be changed and cooked for another half hour. Ammonia smell during cooking is common. The cooked fillet will be greatly reduced in volume. It needs to be cooled.

The cooled fillet of giant squid should be cut into strips in the same way as a simple squid is cut.

Cut 4 onions into half rings. Salt and pepper the fillets cut into strips, fry in vegetable oil with onions in a pre-heated frying pan.
