Boiled squid can be the base for a wide variety of dishes. Salads are made from it, stuffed and fried. To make the squid meat tender and tasty, you first need to choose the right one. Frozen carcasses should be whitish in color, the skin of the squid may be pinkish-purple. Carcasses must be separated from each other. If they stick together, this means that the product has already been defrosted and its quality has been reduced. And now we will tell you how to properly cook the right squid.

Step 1
Place a pot of water on the stove. There should be a lot of water in it - at least three liters, because after we put the squid in boiling water, the water should boil as quickly as possible.
Step 2
Rinse defrosted squids thoroughly in cold running water. Frozen squid fillets are sold peeled and skinned. If the squids are unpeeled, place them in hot water at about 60aboutC and stir until hot water warms up the entire surface of the carcass. The peel will now come off easily by rubbing it with your hands under running water. Through the hole in the head, remove the remnants of the viscera and the chitinous plate that starts at the base of the tail.
Step 3
After the water has boiled, add salt, toss in the bay leaf and peppercorns. Dip the squid in boiling water and remove the pan from the heat as soon as the water boils again.
Step 4
Soak the squid in a saucepan, without removing the lid, for 15 minutes, after which you can get them out. As a rule, simply boiled squid is not eaten. Squids cooked in this way can be stuffed with rice with minced fish and baked, cut into rings and fried in batter, added to salads. This is a wonderful semi-finished product, with tender meat, in which the specific aroma and taste of squid has been preserved.
