A bright, aromatic, moderately spicy tomato and horseradish sauce will decorate even an everyday table, and at a festive one it will become the king of the menu.
This sauce, amazing with its simplicity and taste, is called differently: horseradish, horseradish, cobra, etc.
It is necessary
- - tomatoes - 1 kg;
- - horseradish root - 150 g;
- - salt, sugar - to taste;
- - garlic - 3 cloves.
Instructions
Step 1
For the preparation of horseradish and tomato snacks, products must be taken based on your own taste preferences. You can add more horseradish and garlic, or not add garlic at all. To prepare long-term storage horseradish, some housewives add table vinegar. Although this component is unlikely to make the snack useful.
Step 2
Prepare food as follows. Wash and dry the tomatoes. You do not need to peel them from the skin and seeds. Cut the tomatoes into random pieces. Peel the garlic and place with the tomatoes.
Peel the horseradish root with a sharp knife or peeler and cut into slices.
Pass all the products prepared in this way through an ordinary manual meat grinder. Or use a food processor.
This procedure can be repeated if desired. Add granulated sugar and salt to the mass passed through a meat grinder 1-2 times. Try as you like: you can put more sugar than salt, for example, or vice versa.
Step 3
Stir the mixture very thoroughly, trying to achieve complete dissolution of sugar and salt. Since tomatoes are usually very juicy, the mass will turn out to be liquid. Pour the horseradish and tomato snack into jars and close with metal screw caps. This sauce keeps well in the refrigerator, but the shelf life is short.
Step 4
To increase the shelf life of horseradish, the product can be sterilized directly in jars. To do this, take a wide saucepan, put a kitchen towel on the bottom of it, having previously folded it in several layers. Next, carefully place the jars of sauce on the bottom of the pan and put the lids on top. Fill the jars with water so that it reaches the jars "shoulder-length" and put on medium heat. Sterilize within 15 minutes. The cans can then be closed with metal screw lids or rolled up using a special tool available from a hardware store.
