Instructions
Step 1
Frying cutlets in a pan.
Preheat a heavy-bottomed skillet over high heat. Melt a lump of butter on it or pour in vegetable oil. Using the handle, rotate the pan, spreading the hot oil over the entire surface. Place frozen or chilled patties on top of it. The cutlets should not be in contact with each other.
Step 2
Fry the patties quickly on each side until golden brown to reduce the loss of meat juices. Reduce heat to low heat and cover skillet with lid. Bring the semi-finished products to readiness. Pierce the patty with a fork, if a clear liquid comes out, the patties are ready. The fried cutlet has an even gray color on the cut, without pink blotches.
Step 3
Fried cutlets in tomato sauce.
Put the semi-finished products in a hot frying pan with butter. Bring them to a brown crust on each side. Make the sauce in a bowl. Combine tomato paste, broth, or water and garlic pressed through a press. Season with salt and pepper. Pour this sauce over cutlets in a frying pan, cover and simmer over low heat for 15 minutes.
Step 4
Cutlets in sour cream sauce.
Fry the patties in oil in a well-heated skillet until crusty. Place the patties on a baking sheet. Make sour cream sauce. Fry the flour for 1 tbsp. spoonful of oil until yellowish. Pour in broth, add sour cream and boil. In another skillet, brown the chopped onions. Combine the onion and sauce and pour over the cutlets. Place in the oven for 20 minutes.
