To prepare 20 cutlets, you will need 1 kg of minced meat, 2 cloves of garlic, 1 large onion, 100 ml of milk, 250 g of white bread, 2 eggs, 50 g of flour and 50 g of parsley. If the minced meat is prepared at home, the meat can be slightly frozen to make it easier to twist in the meat grinder.

The minced meat is defrosted and put in a bowl, the onion is peeled, chopped and added to the minced meat along with raw eggs and finely chopped herbs. Break the bread into pieces, pour milk over them, knead, squeeze and add to the minced meat. Then the meat mass is salted with a teaspoon of salt and mixed by hand for 7 minutes. Cutlets are made from the minced meat, rolled in flour and placed in a preheated pan with butter at a short distance from each other. Cutlets are fried on both sides for 10 minutes without a lid, after which a few tablespoons of water are added to them so that they are well fried inside, and fry on low heat for about 5 minutes more.

Frying secrets

Before cooking cutlets, the frying pan must be well heated for 1-2 minutes - so they quickly cover with a crust and do not lose their juiciness. You can check the readiness of the pan with a drop of water poured into the oil - if the water sizzles in it, the cutlets can be fried.

After placing the cutlets in the pan, you should slightly move each of them so that they do not stick to the hot surface. To cook the burgers in the sauce, add it to the pan 3 minutes before cooking. If the cutlets turned out to be undercooked inside, you should return them to the pan and simmer with a quarter glass of water under the lid for another 5-7 minutes.

To prepare juicy and tasty cutlets, it is important not to overdo it with salt - so, for moderate salinity, 1-1.5 heaped teaspoons of salt will be enough for 1 kg of minced meat. For those who like more salty food, you can put 1 level tablespoon of salt in the minced meat. If the patties have not been salted before cooking, you can serve them cut into pieces and lightly sprinkled with salt or with a salted sauce.
