Clean two medium pikes from scales. Gut them. Then the fish should be rinsed well under running cold water.

Cut off pike heads, tails, cut out fins. Carefully, being careful not to injure yourself on the bone, remove the ridges. Remove the skin from the resulting fillet. Do not discard heads, fins, tails and skin. They will make an excellent ear.

Peel 2 onions and 4 cloves of garlic.

Soak 2 slices of loaf in warm water and leave to swell. Then squeeze the loaf.

Pass the pike fillet, soaked loaf, peeled onions and garlic, 200 g of fresh lard through a meat grinder.

Mix the resulting minced fish well. Season with salt and pepper to taste. Add 2 raw chicken eggs and mix thoroughly.

Now the minced meat must be beaten off. To do this, take it with one hand and forcefully throw the minced meat back into the bowl. Thus, you need to fight off the entire mass.

Form cutlets from the minced fish obtained. Pick up a serving of minced meat the size of a large chicken egg. Give it a rounded shape.

Pour bread crumbs onto a flat plate. Roll each cutlet in them.

Heat the oil well in a skillet. Put the cutlets in it and fry on both sides until an appetizing golden crust appears. This should be done over medium heat. To avoid splashing oil, cover the pan with a splash screen.

Place the fried fish cakes in a saucepan. Pour some hot boiled water on the bottom. Steam cutlets over low heat, covered for 5-7 minutes.

Place mashed potatoes and pike cutlets on a plate. Sprinkle with chopped herbs and serve hot.
