Arancini is an Italian dish that is filled with boiled rice, fried in a large amount of vegetable oil. Rice balls can be stuffed not only with minced meat, but also with stewed vegetables.
It is necessary
- For the basics:
- - 300 grams of rice;
- - 50 grams of cheese;
- - 1/2 tsp turmeric;
- - 1 egg;
- - salt.
- For filling:
- - vegetable oil;
- - 2.st.l. tomato paste;
- - 250 grams of ground beef;
- - 100 grams of cheese;
- - pepper and salt.
- Additionally:
- - bread crumbs;
- - vegetable oil for frying;
- - 2 eggs.
Instructions
Step 1
Place the rice in a saucepan, pour in about 4 cups of water. Salt, add turmeric, cook until tender.
Step 2
If the rice is not ready and the liquid has boiled away, add a little water.
Step 3
Cool the rice.
Step 4
Pour the vegetable oil into the skillet. Add the minced meat, fry for about 5 minutes.
Step 5
Pepper, salt, add tomato paste and a few tablespoons of water. Simmer for about 10 more minutes, until the minced meat is done.

Cut the cheese into large cubes. Add cheese and finely grated egg to the rice. Stir well, salt if necessary.
Step 7
Form rice balls. Moisten your hands with water, place rice in the palm of your hand and spread it. Place a cube of cheese and a spoonful of minced meat in the middle.
Step 8
Roll up the ball. Dip it in an egg. Roll in breadcrumbs. Make all the balls in the same way.

Pour a lot of oil into the pan, heat it up, add the balls and fry until golden brown.
