Arancini is a dish of Italian cuisine, filled with rice balls, fried in oil until golden brown, and therefore similar to oranges. The filling can be very different, but during Great Lent we have it lean.

It is necessary

  • - round rice - 1 glass
  • - champignons - 500 g
  • - frozen green peas - 150 g
  • - spicy curry, saffron and turmeric
  • - thyme
  • - black pepper
  • - vegetable oil - 2 tablespoons
  • - bread crumbs
  • - olive oil - 1 tablespoon
  • - sparkling water - 300 ml
  • - sugar - 0.5 tsp
  • - flour - 1 glass
  • - sea salt - a pinch
  • - deep fat oil - 500 ml

Instructions

Step 1

First, cook the rice in three glasses of water, season it with turmeric or spicy curry and add salt.

Step 2

Finely chop the mushrooms for the filling and fry with onions in vegetable oil. Season with salt and caraway seeds. Defrost the peas, add a little salt and pepper.

Step 3

Forming the arancini. With wet hands, take a spoonful of cooked rice and make a round cake. Put the filling on the cake in the center and connect the edges, forming a ball.

Step 4

Now let's prepare the lean batter. Combine sugar, salt and flour in a bowl. Gradually adding mineral water, knead the dough like for pancakes. We make sure that there are no lumps.

Step 5

Dip the prepared arancini with a spoon in batter, then in bread crumbs, and put the finished semi-finished product on a cutting board. Let's leave for half an hour.

Step 6

Deep-fry the prepared arancini until golden brown. You need a lot of oil so that the balls can float freely in it without touching each other.
