It is necessary

    • 1 kg fresh beef
    • 2-3 onions
    • 2 carrots
    • salt
    • black peppercorns
    • Bay leaf
    • sterile jars
    • lard

Instructions

Step 1

Cut fresh beef into large pieces of approximately the same size. You can use ready-made goulash.

Keep in mind that during the stewing process, beef is boiled down by 40%, so lay more meat than you expect in the original product.

Step 2

Place the meat in a saucepan and cover with water, about 1-1.5 cm above its level.

Step 3

Place on the stove and bring to a boil.

Step 4

Skim off the foam. Wait 5-7 minutes and skim again. Now add 8-10 black peppercorns, 2-3 onions and carrots. Reduce heat, cover saucepan and simmer for about 2 hours.

Step 5

After the specified time has elapsed, remove the onions and carrots from the pan with a slotted spoon. Season with salt to taste. Leave on low heat to simmer for another 1, 5-2 hours.

Step 6

At the end of cooking, put 2-3 bay leaves, after 15-20 minutes remove them from the broth to avoid bitter aftertaste.

Step 7

Banks and lids for them must first be thoroughly washed in hot water, sterilized and dried. You can sterilize cans in a water bath for 15-20 minutes. Boil the lids for 10 minutes.

This ensures that the stew will be stored for several years.

Step 8

You need to put boiling stew in jars.

Gently place the prepared meat in jars, fill it with broth so that the meat is not covered with liquid.

Step 9

To keep the stewed meat longer, it must be poured with fat on top.

Since beef is lean meat in itself, fat of a different origin is used for this purpose. For example, take lard and cut a piece of lard (100g) into small cubes. Place it in a skillet or in a small, wide-bottomed saucepan. Melt the bacon over low heat. Remove greaves.

Step 10

Fill the stew with melted bacon about 1-1.5 cm.

Step 11

Roll up cans with tin lids, turn them over, leave to cool.

Step 12

Store the stew in a cool place.
