Caramel apples on a stick are not only a great treat, but also a good homemade gift. Wrap glossy apples in elegant paper, tie with a ribbon and present to friends and acquaintances for Halloween or Christmas.
It is necessary
-
- 8 medium apples;
- 8 wooden sautey skewers.
- Milk caramel
- 2 cups brown sugar
- 1 ¾ cup cream, 22% fat;
- 2 tablespoons of butter.
- Bright red caramel
- 2 cups brown sugar
- ½ cup corn syrup
- 1 glass of water;
- cinnamon;
- red food coloring.
Instructions
Step 1
Rinse the apples thoroughly under running warm water. Use a glove or vegetable brush to remove the wax coating, if present.
Step 2
Prepare baking sheets or silicone mat.
Step 3
Arrange the apples with the cuttings facing up, remove the cuttings and insert the sticks into the fruit so that they stick to it like candy canes. The stick should reach somewhere in the middle of the fruit.
Step 4
Fill a large bowl with cold water and ice half and half.
Step 5
Combine sugar, cream and butter in a large saucepan. Bring to a boil, stirring constantly. Cook the mixture for about 10 minutes, if you have a caramel thermometer, it should read 120 ° C. Remove the pan from heat and place in a bowl of cold water. Keep in water for about 1 minute until bubbles stop forming. Stir in the cooled caramel from the bottom with warm caramel on top. Remove the pot from the bowl.
Step 6
Take apples one by one per stick, dip in caramel and rotate around the axis in it. When taking out an apple from the caramel, hold it over it for 10-15 seconds so that the excess of sweet syrup does not drip into your kitchen. Place the apples with the chopsticks facing up on a prepared baking sheet.
Step 7
If the caramel has become too hard and you find it difficult to immerse the apples in it, heat it for a few minutes, stirring constantly, over low heat.
Step 8
Leave the apples to cool for 10-15 minutes. This recipe will create a beautiful pale brown caramel.
Step 9
If you want your apples to have a glossy scarlet crust, boil the caramel with corn syrup, water and sugar, add red food coloring to the cooling caramel, following the instructions for it, and a little cinnamon.
Step 10
To make your caramel apples look even more appetizing, after dipping them in caramel, you can dip the bottom or almost all of the apple in crushed crackers, ground nuts, colorful balls for decorating pastries, in sesame seeds, and even in coarse sea salt. Do not forget to hold the crumbled apple on weight for about a minute so that the crumbs do not smudge when you put the fruit to dry.
