Pink salmon baked in foil

According to this recipe, the fish is prepared very easily, and the taste is juicy and tender. You will need (for 6 servings):

- pink salmon of medium size (about 800-1000 g) - 1 pc.;

- 150 ml of mayonnaise;

- lemon - 2 pcs.;

- 4 tbsp. l. olive oil;

- salt, ground black pepper (to taste);

- greens (onions, parsley, coriander, dill, etc.);

- garlic - 2-3 cloves;

- seasonings for fish (optional);

- baking foil.

Defrost the pink salmon, rinse and clean: remove the scales, tail and fins, make a longitudinal cut and remove the entrails from the fish. Rinse thoroughly again. On both sides of the pink salmon, make shallow longitudinal cuts every 1-2 cm.

In order to get tender and aromatic fish, be sure to marinate pink salmon. Make a marinade with salt, pepper, any fish seasoning of your choice, mayonnaise and lemon juice squeezed from 1 lemon. Then put the pink salmon in a deep bowl with the marinade so that the marinade covers it completely. Pink salmon should be marinated for about 2-3 hours.

In the meantime, prepare the filling for the fish. Finely chop the greens, peel and squeeze the garlic. Wash the lemon and cut into half rings. Fill the belly of the fish with herbs and garlic, and put half a lemon into the longitudinal cuts on the pink salmon.

For baking, you need a piece of foil 2 times the size of the fish. Spread the foil in a baking dish, then place the seasoned fish in it, and top the pink salmon with olive oil. Wrap the pink salmon in foil so that the juice does not flow out, and send for baking in the oven preheated to 190 ° C. Bake the pink salmon in foil for about 30 minutes. Pink salmon baked in foil can be served immediately with potatoes, rice or vegetables. Keep in mind that the foil will help keep the fish hot and juicy for a long time.

Cover the baking dish with foil, brush with olive oil, then spread a layer of onions, carrots, slices of tomatoes, lemon over the entire foil. Remember to add salt and bay leaves for flavor.
