Preparing food for a dish
To cook pink salmon in foil baked with cheese and vegetables, you will need the following ingredients: a medium-sized pink salmon carcass without a head, 5 potato tubers, 1 large carrot, a white part of a leek, 300 g of Brussels sprouts, 100 g of hard cheese, half a fresh lemon, sour cream, black pepper, salt, spices.
The pink salmon carcass is cleaned of scales and thoroughly washed in running cold water. Then, using kitchen scissors, cut the rib bones at the base and carefully remove them. The fins are cut out and the spinal bone is removed by making an incision along the back.
The prepared carcass is cut into portions. Rub each piece with a mixture made from salt and ground black pepper, and transfer to a deep container. In a separate bowl, mix the juice squeezed from half a lemon and your favorite spices. Pink salmon are poured with the resulting sauce and left to marinate for 30-40 minutes.
Baked pink salmon recipe
While the fish is marinating, you can start preparing a side dish. Potato tubers are washed in running water and peeled. Cut the potatoes into thin slices. They do the same with carrots. The thinner you cut the vegetables, the faster the dish will cook.
The heat-resistant form is lined with double folded foil. At the bottom of the baking dish, first spread the circles of potatoes, trying to create an even layer. Each layer of vegetables should be coated with sour cream. Carrots are placed on top of the potatoes. The leeks are cut into thin rings and spread in the third layer.
Brussels sprouts can produce an unpleasant, bitter taste. Therefore, it is recommended to pre-boil it in salted water for 5-7 minutes. Heads of ready-made cabbage are cut in half and placed on top of the leeks.
Vegetables covered with foil are sent to an oven preheated to 180-200 ° C for 15-20 minutes. Then the mold is taken out of the cabinet and the top of the foil is removed. Spread pickled fish on baked vegetables. Its surface is also smeared with sour cream. Sprinkle the dish with grated cheese and cover tightly with foil again.
The mold is placed in the oven at the middle level. Pink salmon wrapped in foil on a vegetable bed should cook for about 15 minutes. After this time, the mold is taken out of the oven. Fish and vegetables are carefully placed on a flat dish. Pink salmon baked in foil is served hot.
