Stewed sauerkraut is a dietary, tender and versatile dish. It is good as a side dish for any meat, as well as as an independent lean dish. Sauerkraut is loved for its sharp sourness and rich taste, which, however, can be smoothed out by pre-soaking the product before stewing, or, conversely, enhanced by just shortening the cooking time.

- 400 g sauerkraut;
- 500-600 g of fresh cabbage;

- 600 g sauerkraut;
- 400 g potatoes;
- 1 medium onion;
- vegetable oil;

Step 1
Braised sauerkraut in Latvian style
The secret of crispness and juicy reddish color of a ready-made sauerkraut dish in a large amount of carrots. Grate the carrots on a fine grater, finely chop the onion. In a deep skillet, fry the onions and carrots in vegetable oil until half cooked. Add the cabbage, immediately cover with half of the water and set to simmer until tender. After about 20-30 minutes, add 1 teaspoon of cumin, a pinch of salt and no more than 1 teaspoon of sugar. If stewed in vegetable oil, the dish turns out to be lean, if with animal fat, it acquires a rich taste.
Step 2
Stewed sauerkraut with meat
Chop the onion finely. Pour vegetable oil into a deep frying pan in a layer of 5 mm. Simmer the onion until transparent. Rinse the meat and cut into small cubes. Put it on top of the onion. Raise heat to high and simmer mixture for about 5 minutes. Add sauerkraut, stir well, reduce heat, cover and leave for 20 minutes. If the dish loses moisture quickly, add a few tablespoons of water so that the cabbage is not fried, but stewed. Chop fresh cabbage and add to the pan. You can salt to taste. Simmer under the lid until the meat and cabbage are completely soft for 1-1.5 hours. Add tomato sauce or finely chopped fresh tomatoes, spices and bay leaves 20 minutes before cooking ends.
Step 3
Stewed sauerkraut with potatoes
Peel and boil the potatoes in lightly salted water. Fry the onion until golden brown, combine with cabbage, add 2-3 tablespoons of hot water. Simmer in a sealed container, you can in a pot or in a frying pan in the oven at a temperature of 200 ° C for about 30 minutes from the moment of heating. Cut the boiled potatoes into cubes and mix with the cooked cabbage, season to taste. This dish can be served as a side dish for sausages, meat, chicken.
