  • - 500 g fettuccine
  • - 300 g chanterelles
  • - 300 ml heavy cream
  • - 100 ml chicken broth
  • - 100 ml of dry white wine
  • - 200 g parmesan cheese
  • - 1 onion
  • - 2 cloves of garlic
  • - 20 g butter
  • - 3 tbsp. l olive oil
  • - a bunch of fresh parsley
  • - salt and pepper to taste

Instructions

Step 1

Dip fettuccine into boiling salted water. Cook for 10 minutes. Rinse the chanterelles thoroughly with water and cut into small cubes. Melt butter in a frying pan and add olive oil. Lightly fry the chanterelles and cover. Leave to simmer for 5 minutes.

Step 2

Peel and finely chop the onion and garlic. Add to mushrooms and fry without covering. Pour in cream, white wine and chicken broth. Evaporate for 5 minutes, stirring constantly. Add salt and pepper to taste. Add cheese to the sauce and let it melt, stirring occasionally.

Step 3

Mix fettuccine with hot sauce and leave covered for 5 minutes to soak in the sauce. Rinse the parsley thoroughly with water, dry and chop finely. Place on portioned plates and sprinkle with parsley on top.
