Step 1

To make the vegetable stew, prepare the main ingredient in the dish. Take a small bowl, put the beans in it and fill it with clean water. Leave the beans to soak in this water overnight, preferably in a cool place.

In the morning, drain the water from the beans, rinse them and refill with cold running water. Put a dish of beans on medium heat, add a little vegetable oil. As soon as the water boils, drain it, pour new water into the bowl again and continue to cook the beans until tender, at the end of cooking be sure to salt.

Take onions, peel them, rinse under running water and dry. Next, cut the onion into half rings. Wash and peel the carrots, cut them into small cubes or grate them on a coarse grater.

Wash the tomatoes, pat them dry on a kitchen towel or wipe them off with paper towels, remove the stem and chop into small pieces.

Take a frying pan, pour vegetable oil into it, heat well over medium heat. Place the chopped onion in a skillet and fry for two minutes. Then add the chopped carrots to the onions, mix well with the onions and continue to fry the ingredients.

Next, add the chopped tomatoes to the pan, stir them with the fried onions and carrots and simmer the vegetables for five minutes. At the very end, add boiled beans to the vegetables, mix the ingredients thoroughly, add black pepper, salt and a little granulated sugar.

Cover the vegetables with a lid and simmer for a few minutes.

Stewed beans with vegetables are ready. You can serve it hot or cold. Garnish the beans with chopped herbs or sprigs of dill and parsley before serving. The bean stew can be served with cream cheese, feta or mozzarella, or with warm, aromatic homemade scones.
