Beans are a rather capricious and difficult-to-cook legume. Green beans cook quickly and hassle-free, though. The basic rule for preparing bean dishes is a strict distribution of beans by varieties and colors. Mixing different varieties together is not recommended, since they also have different cooking times. White beans are pre-soaked in cold water, and then stewed or boiled.
