Spread 1 tablespoon flour with 50 grams of butter, pour 100 grams of dry white wine, the same amount of cream and 50 grams of chicken broth into the pan. Simmer the sauce for about 10 minutes, then add 2 yolks, 2 tablespoons of lemon juice and stir well. Cut 300 grams of champignons into thin slices.

Place the turkey fillet on the bottom of the baking dish, cover with a layer of mushrooms, cover with the prepared sauce and sprinkle with grated hard cheese. Cover the tin with foil and bake for 15 minutes at 200 ° C. Then open the foil, reduce the temperature to 180 ° C and bake until golden brown.
