This dish will take a fair amount of time to prepare, but the end result is deliciously tender meat!
It is necessary
- - 1 kg of beef brisket;
- - black pepper to taste;
- - coarse sea salt;
- - olive oil;
- - half a carrot;
- - 2-3 stalks of celery;
- - a small head of garlic;
- - 2-3 pcs. carnations;
- - 0.5 tbsp. black peppercorns;
- - 0.25 tsp nutmeg;
- - 400 g hot water.
Instructions
Step 1
Pepper the layer of meat and salt with coarse sea salt. Wrap the beef tightly in a roll and tie carefully with a scourge.
Step 2
In a large, heavy skillet, heat the olive oil well and fry the roll in it until crisp on all sides.
Step 3
Chop vegetables coarsely: carrots and celery. Cut the head of garlic into 2 parts. Add all this to the pan with the meat and fry.
Step 4
Add black peppercorns and cloves to the skillet. Sprinkle the contents with grated nutmeg.
Step 5
Pour hot water into the pan and let it boil. Then cover it tightly with a lid and send it to the oven, preheated to 150 degrees, for 2 hours.
