Minestrone is a very light soup traditionally made only from vegetables, without meat, it comes from the rich cuisine of Italy. Moreover, it is especially good if it is prepared with seasonal and fresh ingredients. The cooking time for minestrone is very short compared to other soups.
To prepare the traditional vegetable minestrone, you will need the following ingredients - 1 medium potato, 1 carrot, 1 onion, 2-3 celery stalks, 1 leek, 1 zucchini, 150-200 g canned beans, frozen vegetable mixture, 1-1, 5 liters of water (depending on the required thickness of the ready-made soup), literally 80-10 ml of dry white wine, 1 tbsp. vegetable oil, 40-50 g butter, a handful of noodle soup, half a handful of grated Parmesan cheese, salt and ground black pepper.
Real Italians, of course, would not use a frozen mixture of vegetables, but in Russian conditions it will be very useful. The best for the minestrone is a mixture of the Lecho type with beans and bell peppers.
First, rinse thoroughly and cut all vegetables into small cubes. Everything except celery is best cut into slices. Take a deep saucepan that will hold all the ingredients and broth, heat both types of oil in it and put the chopped onions and carrots in a bowl, fry for 3-4 minutes. After that, put the leeks, zucchini, celery into a saucepan, mix all the vegetables in the bowl thoroughly and simmer them for another 3-4 minutes, while stirring constantly. Boil water in a separate saucepan.
Then pour dry white wine into a saucepan and continue the stewing process for another 4-5 minutes. Boil the potatoes in the second bowl for the same time.
This measure of separating the potatoes from the rest of the vegetables during cooking is intended to reduce the amount of starch. A substantial part of it will remain in the water, rather than go into the soup.
After the specified time has elapsed, add the frozen mixture to the stewed vegetables, mix all the ingredients thoroughly and, since the vegetables have produced a very strong juice, bring the contents of the pan to a boil. After that, put the potatoes in a bowl and pour in the broth (preferably preheated). Throw the beans from the jar in a colander, let the juice from the beans drain a little (literally a minute) and add them to the soup, which is also pepper and salt.
Thus, cook all the vegetables in the pan for another 10-12 minutes, and literally a couple of minutes before the end of this time, pour the noodles into the pan. Then the ready-made minestrone soup is served on the table poured into plates, in which it is sprinkled with a small amount of grated cheese.
In principle, it is permissible to add any cookable vegetable variety to this soup. So, the ingredients of the minestrone soup can include tomatoes, cloves of garlic, which will add some piquancy to the finished dish, a white variety of beans or others.
Also, if you do not want to follow the exact and minute-by-minute cooking technology, use the services of such a home kitchen assistant as a double boiler. In this case, just place all the ingredients in the bowl of the device, then set the "Soup" mode and go to watch a movie while the multicooker prepares your minsetrone. In this case, the soup will in no way be inferior to that cooked in an ordinary saucepan.
