It is necessary

    • 500 g of fish.
    • For the tartar sauce:
    • 1 tsp mustard;
    • a pinch of pepper and salt;
    • 1 tsp Sahara;
    • half a glass of vegetable oil;
    • 3 tbsp. l. vinegar;
    • a few olives
    • capers and gherkins;
    • 2 yolks.
    • For the polish sauce:
    • 1 egg;
    • 50 g parsley;
    • 30 g butter;
    • half a lemon.
    • For tomato sauce:
    • 400 g of tomatoes;
    • half a small head of garlic;
    • 1 tbsp. l. Sahara;
    • 1 tbsp. l. vinegar;
    • salt to taste.

Step 1

Cook the fish in one of the possible ways. If you prefer lighter meals, use the microwave or double boiler. For example, for a medium-sized salmon steak, 10 minutes of cooking at maximum microwave setting will be enough. Fried fish is also good. To keep it juicy, prepare batter for it. Mix flour, milk and egg, dip a piece of fish, peeled from skin and bones in this mixture. Fry the fish on both sides until golden brown.

Step 2

Prepare the fish sauce. The simplest option is classic tartare. Separate the yolks from the whites and transfer to a bowl. Add mustard and vinegar, thoroughly grind the mixture into a homogeneous mass. Gradually, in small portions, add vegetable oil to it - sunflower or olive. Rub this mixture with a spoon without changing direction, for example clockwise. In the process, add salt and sugar, as well as pepper. You should have a uniform white emulsion. Cut capers, olives and gherkins into small cubes, add them to the prepared sauce and stir again. Prepare the tartare right before serving, as this sauce cannot be stored for a long time even in the refrigerator - it begins to stratify.

Polish sauce has a very delicate taste. It works best with lean white fish such as cod. Boil hard-boiled eggs, peel and chop finely. Chop parsley and mix with eggs. Pour the mixture with melted butter and lemon juice, salt and mix thoroughly. Place the fish chunks on a plate and pour the sauce over each.

If you like tomatoes, serve delicious tomato sauce with your fish. Chop the garlic finely, fry it in vegetable oil, add sugar and vinegar. Scald the tomatoes, peel them off, chop finely. Add them to the garlic skillet and simmer for five minutes over medium heat, stirring constantly. Season with salt to taste.
