The sweet and delicious Tulumba dessert is traditionally served with coffee or tea and is one of the most popular dishes in the Balkans and Turkey.

It is necessary

  • - 200 g flour;
  • - 3 pcs. eggs;
  • - 340 ml of water;
  • - 120 g of sugar;
  • - 1⁄4 teaspoon of salt;
  • - vegetable oil;
  • - 1 tbsp. a spoonful of lemon juice;
  • - 100 g butter (margarine);

Instructions

Step 1

Prepare tulumba syrup: In a saucepan, combine 120 g of water, one tablespoon of concentrated lemon juice and 120 g of sugar on a fire and bring to a boil.

Step 2

Then simmer the syrup for 15-20 minutes over low heat, stirring occasionally. Remove from heat and cool to room temperature.

Step 3

Make tulumba choux pastry. Put butter or margarine in a saucepan, pour in 220 ml of water, put on fire and bring to a boil.

Step 4

Add ¼ teaspoon of salt to the boiling mixture and gradually add 200 grams of flour, stirring thoroughly. Boil the dough for another two minutes, it should separate well from the sides of the pan. Then remove from heat and cool.

Step 5

Gradually add three large eggs into the flour mixture, beating the eggs one at a time and kneading well after each. You should get a homogeneous, shiny, smooth mass.

Step 6

Fill a pastry syringe with the dough and squeeze out into pieces about 5 cm long. Deep-fry the tubes. To do this, heat the vegetable oil in a pan and fry the dough pieces on both sides until golden brown. There should be enough oil for the dough pieces to float and sink in the boiling oil.

Step 7

Dip the finished tulumba in prepared lemon syrup so that they are well saturated. Place the cakes on a platter.
