Baked turkey is one of the popular American dishes. Usually it is prepared for Thanksgiving, one of the main national holidays, which is celebrated when the whole family gathers to the table, no matter how far the family members are from their home. Americans have come up with many ways to cook turkey so that it becomes a true decoration of the holiday table.

It is necessary

    • 1 turkey weighing about 2 kg;
    • turkey liver;
    • 200 g of beef pulp;
    • 100 g ham;
    • 100 g smoked brisket;
    • 30 g dry mushrooms;
    • 2 raw eggs
    • 2 tbsp. l. grated cheese;
    • 1 glass of dry white wine;
    • 50 g butter;
    • 1 tbsp. a spoonful of flour;
    • 1 glass of milk;
    • 4 peeled walnuts;
    • 1 sprig of salvia;
    • 1 sprig of rosemary;
    • grated nutmeg;
    • vegetable oil;
    • salt;
    • pepper;
    • dry white wine;
    • ground black pepper.
    • Filling option:
    • 100 g bacon;
    • 1 celery root;
    • 50 g prunes;
    • 2 tbsp. l. cream with a fat content of 35%;
    • 1/2 lemon zest;
    • a pinch of nutmeg;
    • 500 g kohlrabi;
    • 500 g brussels sprouts;
    • 3 tbsp. tablespoons of fresh bread crumbs.

Instructions

Step 1

Wash the turkey, pat dry, rub the skin with salt and pepper. Put mushrooms in a bowl, cover with hot water. Cut the beef flesh into very small pieces, drain the water from the mushrooms, put a little butter in the pan, fry the beef and mushrooms, transfer to a separate bowl. Finely chop the turkey liver, heat a piece of butter in the same pan, fry the liver, put in a bowl with beef and mushrooms.

Step 2

Put 20 g of butter in a saucepan, heat slightly, add milk, salt, stir, pour flour through a sieve, stir, wait until the bechamel sauce thickens, sprinkle with grated nutmeg and remove from heat. Finely chop the ham, grate the cheese, crush the walnuts, cut the smoked brisket into slices. Put ham, cheese, walnuts in a bowl with mushrooms, meat and liver, pour the sauce there, beat in raw eggs, salt and mix thoroughly.

Step 3

Stuff the turkey with this mixture and sew up with thick, coarse, unpainted threads, tie the smoked brisket slices with twine to the stuffed turkey breast. Grease a baking sheet with butter or cover with baking paper, put the turkey on the baking sheet, put butter shavings on top, brush the sides with vegetable oil, add rosemary and salvia.

Step 4

Preheat the oven to 190 degrees, put the turkey in the oven, cook until the bird turns golden, sprinkle it with dry white wine, pour 4 teaspoons of hot water on a baking sheet, bake in the oven for another 2 hours. Remove, untie the smoked brisket and place the turkey in the oven for another 20 minutes, remove the strings and serve hot with the brisket and boiled spinach.

Step 5

Filling option Wash the prunes, cover with hot water, leave for 30-40 minutes, fold in a colander, chop finely. Wash celery and kohlrabi, peel, cut into strips very thinly.

Step 6

Chop the bacon, sauté in butter, add kohlrabi, fry for 5 minutes, add Brussels sprouts and celery, sauté for another 2 minutes. Transfer to a bowl, add prunes, bread crumbs, lemon zest, cream and nutmeg, season with salt, pepper and stir.
