  • - garlic - 4 cloves;
  • - a bunch of parsley - 1 pc;
  • - bay leaf - 2 pcs;
  • - saffron - 1 pinch;
  • - salt;
  • - pepper.

Step 1

First, you need to cook shrimp broth, more precisely from their heads and shells. Put them in a saucepan, cover with water and put on fire. Cook until the water boils. After this has happened, it is necessary to add the following to the broth: peeled carrots, 2 onions, 2 cloves of garlic, as well as parsley stalks and bay leaves. Don't forget to season with salt and pepper. Bring the resulting mixture to a boil, then cook for another half hour. At the end of this process, strain the broth.

Step 2

The tomato must be peeled off. This is easy to do if you first pour boiling water over and cool. Chop the remaining pulp. The peppers should be cut into strips, only remove the core before doing so. Mix parsley leaves with 2 cloves of garlic and grind until gruel. Pour the saffron into a glass and fill it with a little warm water.

Step 3

With mussels, do this: rinse them thoroughly and remove "beards" from their shells. Once you've done this, transfer them to the buttered skillet and cook until their shells open. Place them in a separate cup. Then fry the shrimps in the same pan for 3 minutes.

Take another skillet and place the following on top of it: squid rings, garlic and parsley gruel, and finely chopped tomatoes. Fry this mixture for 4 minutes.

Then add rice to the mixture in the pan and cook for 6 minutes. Then add the chopped peppers and cook for another 4 minutes. After the time has passed, pour the broth and the saffron dissolved in water. Arrange the shrimp and mussels. Pepper and salt the resulting mixture. Cook until rice is cooked through. Paella in Valencia is ready!
