    • olive oil - 1 glass;
    • dry white wine - 1 glass;
    • broth (chicken or fish) - 0.5-1 liter;
    • ground saffron - 1 teaspoon;
    • ground paprika - 1 teaspoon;
    • garlic - 1-3 cloves;
    • salt
    • ground black pepper
    • rosemary
    • parsley to taste;
    • lemon or lime - 1-2 pieces.

Instructions

Step 1

To prepare paella, you need a special frying pan called a paella. It can be replaced by a wide, shallow skillet with a thick bottom. Better to take cast iron.

Step 2

For paella, you need to take fresh seafood. If you use frozen, then before cooking they must be thawed at room temperature and drained.

Step 3

Chop the onion into half rings, finely chop the garlic. Pour half a glass of olive oil into a frying pan, heat. Add half the onion and garlic to the warmed oil. Pass for 1-2 minutes.

Step 4

Add mussels to the pan, pour over them with wine and a glass of broth. Cook for 3-5 minutes. Then pour the broth with mussels into a bowl and set aside.

Cut the chicken fillet into large pieces. Pour most of the remaining olive oil into the pan. Fry the chicken pieces in it until golden brown.

Add the saffron, leftover onion and garlic to the pan. Salt. Simmer for 3-5 minutes.

Step 7

Core the bell pepper and cut into large strips. Add to the pan along with the green beans. Fry for 1-2 minutes.

Step 8

Pour boiling water over the tomatoes and remove the skin from them. Cut into small cubes and add to the pan, stir well. If fresh tomatoes are not available, tomato paste can be used.

Step 9

Add the washed rice to the pan and pour over the mussel liquid and part of the broth. Rice should go under water to a depth of 1 phalanx of the finger. Simmer rice for 20-25 minutes. The liquid needs to be absorbed into the rice.

Step 10

At this time, peel the squid from the skin, cut them into small pieces (3x2 centimeters) or rings. Peel the shrimps. Fry seafood in olive oil for 2-3 minutes.
