The finished biscuit according to this recipe turns out to be plastic, not brittle at all. But the whole highlight in the filling is the combination of marmalade with fresh fruit. The taste is completely unpleasant, brighter and more delicate than that of ready-made rolls with jam.
It is necessary
- For biscuit dough:
- - 175 g of sugar;
- - 150 g flour;
- - 90 g butter;
- - 6 eggs.
- For filling:
- - 400 ml orange marmalade;
- - 3 large oranges.

Instructions
Step 1
Peel the oranges, cut the pulp into small pieces. Heat the oven to 175 degrees. Line a baking sheet with baking paper and butter.
Step 2
Melt the butter, cool. Divide the eggs into whites and yolks. Whisk the yolks fluffy with 2 tablespoons of warm water and half the sugar. Pre-cool the whites, then whisk with the remaining sugar, mix with the yolks.
Step 3
Sift flour on top, mix gently. Pour in melted butter and knead the dough. Pour the biscuits onto the prepared baking sheet. Bake for 10-12 minutes. Tip the biscuit onto a dry tea towel sprinkled with a thin layer of sugar. Carefully remove the paper, use a towel to roll the cake into a roll.
Step 4
Prepare the filling. Combine the chopped oranges with the marmalade, or add chopped fresh mint for flavor.
Step 5
Gently unfold the cooled biscuit, grease with the filling, roll again into a roll. Wrap in two layers of cling film, leave in the refrigerator for a couple of hours to fix the shape of the roll.
Step 6
You can decorate the finished sponge roll with citrus fruits with melted chocolate, sprinkle with cinnamon and powdered sugar on top through a sieve.
