Instructions

Step 1

Rub the seabass with salt and put in a cold place for 10-15 minutes. Chop basil, pine nuts, garlic, parmesan cheese and thyme in a blender. You should have a mixture of sour cream consistency. Add the juice of one lemon to the resulting mass and mix everything thoroughly.

Step 2

Grease the cooled sea bass with the prepared mixture on both sides and fry the fish until golden brown in olive oil. You can also bake seabass in the oven.

Peel the potatoes, cut into thick slices or leave whole. Place in a baking dish that has been greased with olive oil and bake in the oven until brown. Chop one garlic clove, onion, rosemary and some thyme until crumbled. Sprinkle the mixture over the potatoes a few minutes until tender.

Step 4

Place the sea bass on a plate and place the baked potatoes next to it. Garnish with basil sprigs, watercress, or thin lemon wedges.
