A healthy diet is not necessarily a boring and bland diet. A large number of dishes can be prepared from vegetables, which will not only be healthy, but also very tasty. The Tomato Basil Potato Casserole meets all of these criteria and may well become one of your family's favorite foods.

- 4 red paprika;
- 400 g of tomatoes;
- 400 g zucchini;
- 250 ml yogurt;
- 3 cloves of garlic;
- 100 g of cheese;
- a bunch of basil.
Instructions
Step 1
Turn the oven to 200 ° C while heating. And you start preparing the products. Peel potatoes, rinse well, cover with water, put on fire, cook for 20-25 minutes. Drain the broth from the finished tubers, cut them into transverse slices 5 millimeters thick.
Step 2
Line a baking sheet with baking parchment and red peppers. Place in the oven on the highest level. Wait for the moment when the skin on the paprika darkens and begins to become covered with bubbles. Once the peppers are removed, turn the oven temperature down to 180 ° C.
Step 3
Cut out the place where the stalk is attached to the tomatoes, immerse the fruits in boiling water for 10 seconds. Immediately dip the tomatoes removed from the pan into a bowl of ice water. After such a procedure, using a sharp knife, you can easily remove the skin from the tomatoes. Then you just have to cut them into small cubes.
Step 4
Wash the zucchini, cut into thin strips lengthwise.
Step 5
Peel off the toasted peppers and cut each in half. Do not pour out the juice that is released, but collect it in a small cup. Remove the seeds from the paprika.
Step 6
Take a large fireproof mold and grease it with oil. Put the zucchini strips on the bottom, pour the collected paprika juice over them, lightly salt. Spread the tomato cubes evenly with the next layer.
Step 7
Peel the garlic and chop very finely. If you want, you can just push it through the press. Chop basil leaves with a knife, mix with chopped garlic. Sprinkle them over the casserole dish.
Step 8
Toss the yogurt with the eggs and half of the existing cheese. Season with salt and pepper to taste. Put the potatoes in a mold, it will be very nice if you try to give it the look of a tiled roof. Spread the egg yogurt dressing over the potatoes. Arrange the red pepper strips. Sprinkle the remaining cheese on the casserole, drizzle with a couple of drops of oil, bake in the oven for about 30 minutes until golden brown.
