  • - sake - 1 spoon;
  • - a pinch of sugar;
  • - black pepper to taste;
  • - sesame oil for frying;
  • - flour for dusting.
  • For the sauce:
  • - 3 tablespoons of rice and soy sauce;
  • - a teaspoon of dark sesame oil.

Instructions

Step 1

We clean the ginger and garlic, rub on a fine grater. Finely chop the onions and green onions, chop the Chinese cabbage, and then finely chop.

Step 2

In a large bowl, combine the minced meat with sugar, soy sauce, sake, oyster sauce, garlic and ginger. Season with black peppercorns to taste. Add cabbage and both types of onions, mix the ingredients thoroughly so that the filling is as homogeneous as possible. Cover the bowl with plastic wrap and put the minced meat in the refrigerator for 30 minutes.

Sprinkle the work surface with flour. Put a circle of gyoza dough in the palm of your hand, put about a tablespoon of the filling in the middle. Lubricate the edges of the dough with water and pinch, forming folds, so that the gyoza is not only tasty, but also beautiful. Put the finished Japanese dumplings on a floured surface.

Step 4

Grease a non-stick frying pan with sesame oil and heat over medium heat. We spread the gyoza. After 30 seconds, pour hot water into the pan so that it covers the gyoza by half, immediately close the pan with a lid. After 5-6 minutes, remove the lid, if the liquid remains, let it evaporate. Pour the gesda with a tablespoon of sesame oil, close the lid and leave on the fire for another 1-2 minutes, so that a golden crust forms on the bottom of the dumplings.

Mix the ingredients for the sauce. Serve hot gyoza with sauce.
