These sesame cookies are popular and common in Japan. It can come out white or dark depending on whether or not peeled sesame is used. Before baking, the dough must be cooled. By experimenting with the amount of salt and sugar, you can get salty or sweet sesame cookies.

- - 40 g almond flour;

Cut butter into small cubes on parchment paper and refrigerate.

In a food processor, combine flour, almond flour, sugar, and salt. If you don't have a food processor, you can use a plastic bag to mix all the ingredients.

If you want to get the biscuits with chopped sesame seeds, then add the sesame seeds to the food processor. If you prefer cookies with whole sesame seeds, add them with egg yolk later.

Remove the chopped butter from the refrigerator and grind in a food processor along with the bulk.

Beat the egg yolk into the mass and mix in a food processor.

Put the mixture in a bowl, mix with a silicone spatula.

Turn the oven on to preheat to 175 ° C. Wrap the resulting mass in cling film, roll it into sausages with a diameter of 5 cm. Cold in the refrigerator for 1 hour. After that, remove the film and cut into circles 0.5-0.6 cm thick. If you cut into 1 cm circles, then the amount of cooked cookies will turn out to be not 40, but 20 pieces.

Place the circles on the parchment and bake for 15 minutes, until the edges are lightly browned.
