Gedza dumplings are a traditional Japanese dish. They can be ordered at Asian restaurants or made at home with your own hands. The main thing is to find the right recipe and get the right ingredients.
Outwardly, Japanese gedza dumplings resemble dumplings, but their taste is very unusual. Sesame oil, on which dough products are fried, gives the dish an original aroma, and the filling of seafood or minced pork with spices just drives you crazy. Such a delicacy will not be ashamed to serve on the festive table.
Ingredients of the dish
To prepare Japanese cuisine, you will need ingredients that you will have to look for in supermarkets and Asian stores. Oyster sauce and sake are added to the filling of traditional gedza dumplings. These ingredients give the pork, mushrooms or seafood an original taste.
The filling of dumplings is made from pork, mushrooms, shrimps. To improve the taste of the dish, minced onions, Chinese cabbage leaves, and garlic are added to the minced meat. Sometimes chefs use finely chopped fruits instead of meat products. Sweet gedza is deep-fried and served with ice cream.
Traditionally, dumplings are fried in sesame oil. It can be found in supermarkets and health food stores. On the basis of sesame seed oil, a sauce is also made, which is served with a Japanese dish.
Unusual ingredients, if desired, can be replaced with familiar products. For example, many housewives use vegetable oil instead of sesame oil, and exchange sake for vodka. The taste of such a dish will undoubtedly be different.
Gedza dumplings recipe
To make traditional Japanese gedza dumplings, you need the following ingredients:
- flour - 180 g;
- minced pork - 300 g;
- Chinese cabbage - 400 g;
- green onions - a medium-sized bunch;
- ground ginger root - 5 g;
- garlic - 3 cloves;
- water - 50 ml;
- soy sauce, lemon juice and sake - to taste;
- sesame oil - for frying.
First, prepare the dough. Twice sifted flour is mixed with 50 ml of hot water, salt is added and the dough is kneaded. When the preparation for dumplings becomes smooth to the touch, cover it with cling film and leave for half an hour.
Minced meat is made from pork meat. Peking cabbage is chopped into small strips, chopped onion, chopped garlic and ground ginger root are added to it. Combine the vegetable part with the minced meat, add a little lemon juice and soy sauce, mix the filling thoroughly.
A sausage is formed from the dough, cut into small pieces, which are then rolled out. You should get circles with a diameter of about 7-8 cm.
Put the filling on the dough and mold the dumplings.
Gedza is fried in a deep frying pan in sesame oil. First, they make a strong fire and wait for the moment when the dumplings are browned. After that, cover the pan with a lid and reduce the gas to a minimum. After 10-15 minutes, the gedza is transferred to the bowl and the next batch is fried.
The ready-made Japanese dish is served with an original sauce based on sesame oil. Half a teaspoon of oil is mixed with 2 tbsp. l. soy sauce, 1 tsp. apple cider vinegar and sugar. If the sauce is quite tart, you can crush it with cold water.
