The ham is a rather fatty type of pork, however, thanks in large part to this, it is excellent for baking. Meat gives a lot of juice, which can serve as a base for a sauce. The ham can be cooked in a variety of ways - with the addition of cider, capers, garlic, and aromatic herbs.
Pork leg with cider and apples
You will need;
- 800 g boneless pork leg;
- 800 g of young potatoes;
- 5 sour apples;
- 10 pieces of prunes;
- 2-3 cloves of garlic;
- 8 sage leaves;
- dried cumin;
- 30 ml of olive oil;
- 50 g butter;
- 2 tbsp. cider;
- 1 tbsp. chicken broth;
- salt and freshly ground black pepper.
If you don't have prunes, replace them with raisins or fresh plums.
Wash the meat and make several cuts in it. Peel the garlic and cut each clove into 4 pieces. Insert the garlic chunks into the cuts in the meat along with the sage leaves. Preheat the oven. Grease a baking sheet with high sides with vegetable oil, put the ham on it, salt, pepper and sprinkle with caraway seeds. Pour a glass of broth there.
Roast the ham for 1 hour. When the first 15 minutes have passed, remove the meat and pour the cider over it. Repeat the operation every 15 minutes until the end of baking. Peel the apples, remove the core and seeds and cut the flesh into large cubes. Place the apples in a saucepan along with half the oil and cook over medium heat for 10 minutes. Then add them to a baking sheet with the meat and bake the ham for another 15 minutes.
Wash the potatoes and boil them in the skins. It must remain tight enough. Cut the finished tubers into 2-4 parts, salt, pepper and fry in the remaining butter until golden brown. Cut the finished ham into plastics and serve with potatoes, apples and the juice obtained during cooking.
A mixture of fried vegetables such as zucchini, eggplant and carrots is also suitable as a side dish for the ham.
Bohemian pork leg
You will need:
- 800 g boneless pork leg;
- 400 g of rice;
- 3 bell peppers;
- 6 medium sized tomatoes;
- 2 onions;
- 1 tbsp. ground paprika;
- 3 tbsp. vegetable oil;
- salt and freshly ground black pepper.
Mix 2 tablespoons. vegetable oil and paprika, add salt and pepper. Brush the ham with this mixture and place it on a baking sheet. Roast the meat in the preheated oven for 50 minutes. Peel and chop the onion into rings. Scald the tomatoes with boiling water, peel them off and cut the flesh into cubes. Peel the bell peppers from partitions and seeds and cut into strips.
Pour some oil into a deep frying pan, fry the onion, then add tomatoes and bell peppers to it and simmer over very low heat for half an hour. Season with salt and pepper in the middle of cooking, and add a few tablespoons to them. meat juice obtained by baking the ham. Boil the rice separately in salted water. Serve the chopped ham with vegetables and rice. This dish is best prepared right before serving.
