The cabbage should be shredded correctly: in even and beautiful stripes. It is very important to choose the right direction. So, cross-cut the sheet. With this method, there will be much more juice than with longitudinal cutting. During salting, you will not need to add additional brine. Therefore, the fermentation will be better and more even. The width of the strips when shredding should be narrow: from one to three millimeters. If the strips are more than four millimeters, this is already a regular cut. The quality of the shredded cabbage directly affects the fermentation result. Strips that are too narrow will ferment quickly and therefore become sour and flabby. And wide strips will not ferment properly.

If the cabbage has withered, it should not be shredded. After all, a dry head of cabbage does not emit juice at all. Use this cabbage to make stuffed cabbage. If you do choose to chop it, place the cabbage on a cutting board and cut into cubes. Flabby leaves are great for stewing or cooking borscht.

When choosing a shredding knife, use the sharpest one. It should be free from flaws and rust. Another important selection criterion is a comfortable and non-slip handle. Or choose a knife with a high-quality rubberized handle: it does not slip in your hand. A shredder is a special tool for slicing cabbage. It is very easy to use: cut the cabbage across the veins of the leaves into pieces 7-8 cm wide and rub them on the shredder blade.
