Lightly salted herring is a delicacy. Meanwhile, it is easy to prepare it at home.
To prepare lightly salted herring, you will need the following ingredients:
- Herring carcasses (preferably chilled, not frozen) - 2 pcs.
- Water - 1 liter
- Salt - 40 g
- Sugar - 1 tablespoon
- Bay leaf - 1-2 pcs.
- Black peppercorns - to taste
- Cloves to taste
First you need to prepare the brine. Bring the water to a boil, add sugar and salt, pepper, bay leaf and cloves to the boiling water. Bring the resulting brine to a boil again, remove from heat and leave to cool.
We cut the herring, gut, wash, cut off the fish heads, as they often give unwanted bitterness. We put the prepared fish entirely in an enamel or glass deep dish. Fill with brine at room temperature.
Close the herring marinated in this way with a lid and put it in a cool dark place (cellar, veranda or lower compartment of the refrigerator). After two to three days, the herring will be ready.
Before serving, cut it into portions, if desired, free it from bones and skin, cover with onions, cut into thin rings, and pour with fragrant vegetable oil.
You can store lightly salted herring for about two weeks - in the refrigerator, in brine. If the fish is too salty, you can rinse it with water.
Herring can be replaced with mackerel.
