Such a dish as vinaigrette is well known and loved by many. However, the vinaigrette with lightly salted herring is a completely new and incredibly tasty dish that is quite easy to prepare.

Ingredients:

  • 2 fillets of lightly salted herring;
  • 2 potato tubers;
  • 2 pickled cucumbers;
  • 1 medium beet
  • 1 carrot;
  • 1 onion head;
  • sunflower oil, ground black pepper and salt - to taste.

Preparation:

  1. Potato tubers, beets and carrots must be thoroughly rinsed in running water and placed in a large saucepan. Vegetables are poured with clean water and the pan is sent to a hot stove.
  2. After the water boils, the fire is reduced and the vegetables are cooked until cooked. By the way, their readiness can be checked very simply. To do this, take a fork, preferably with not very sharp ends, and try to pierce, for example, carrots. If you do this effortlessly, then the vegetable is ready.
  3. Next, prepare the herring, you need to make a fillet from it. To do this, separate the head from the fish and pull out the insides. Then cut the skin with a sharp knife along all edges and carefully, starting from the tail, remove it. Then separate the meat from the backbone and other bones. If small bones remain in the fillet, they can be pulled out with tweezers.
  4. Then you can start grinding all the ingredients. First, cut the fish fillets into small cubes with a sharp knife and pour into a deep bowl.
  5. The onion needs to be peeled, washed and very, very finely chopped into cubes.
  6. The cooled boiled vegetables also need to be chopped, but first you must remove the peel from them. Both carrots and beets and boiled potato tubers must be cut into small cubes with a sharp knife. Chopped vegetables are poured into the same bowl as herring and onions.
  7. Then you need to remove the skin from the cucumbers and cut them into medium-sized cubes. Cucumbers are mixed with other ingredients. Instead of pickled cucumbers, you can use lightly salted or pickled cucumbers.
  8. If desired, you can add fresh herbs, for example: dill, green onions, parsley, or any other.
  9. Next, the vinaigrette is seasoned with oil, salted and pepper. All ingredients need to be mixed well and left in a cool place for 15-20 minutes to infuse.
