Semolina is a coarsely ground wheat grits. The particle diameter of the grains is usually 0.25-0.75 mm. Semolina porridge, dumplings, casseroles, cakes, dumplings, semolina pies and other dishes are made from it. Semolina is less commonly used in salads and soups.
Many in childhood were forced to eat a portion of semolina for breakfast, therefore, it turns out that semolina is useful. But at the same time, there are contraindications to its use.
The benefits of semolina
Semolina contains a minimum amount of fiber, it quickly boils down and is well absorbed by the body. Liquid porridge is often included in diets that doctors prescribe after stomach and intestinal surgeries.
Semolina is the only cereal that is digested in the lower intestine, where it is absorbed into its walls. This cereal is able to cleanse the body of mucus, remove fat. Semolina contains enough vegetable protein and starch, but less vitamins than other cereals. From vitamins semolina is rich in vitamins E, B1 and 2, B6, from minerals - iron, calcium, sodium, phosphorus, magnesium, potassium.
Semolina harm
Semolina contains a lot of gluten protein (in other words - gluten). For many, gluten causes the hereditary celiac disease. The intestinal mucosa under the influence of this protein in a celiac patient becomes thinner, therefore, the absorption of nutrients is impaired. Some people are allergic to gluten.
Phytin is also present in semolina, it binds calcium salts and they cannot enter the bloodstream. When the level of calcium salts falls below normal, the parathyroid glands begin to take calcium from the bones.
So semolina should be included in the diet, but in moderation. If you feed children with porridge more than 2 times a day, then there is a risk of rickets or spasmophilia. The rest of the cereals bind calcium much less than semolina.
