Vinaigrette is a popular vegetable dish that has very ancient roots. In many European countries, the vinaigrette is called "Russian salad". This delicious and appetizing dish is very healthy - thanks to the combination of several types of vegetables, the vinaigrette is incredibly rich in vitamins.
It is not difficult to prepare a vinaigrette, and it will take very little time to cook it - it is considered one of the most uncomplicated salads, although at the same time it consists of a large number of components.
In order to prepare the vinaigrette, you will need: one large beet, two large carrots, three medium-sized potatoes, one large onion, 200 grams of sauerkraut, 200 grams of pickled cucumbers, 150 grams of boiled beans.
- Boil the beans, pre-soaked for several hours (preferably overnight).
- Boil beets, carrots, potatoes until tender. Peel the vegetables and cut them into small cubes (no more than one centimeter).
- Peel and finely chop the onions.
- Cut pickled cucumbers into small cubes.
- Mix all ingredients and add sauerkraut. Usually, during mixing, the beets color all other vegetables in a burgundy color. If you want to make the vinaigrette variegated, and not monochromatic, season the beets separately with vegetable oil and only then add them to the main components of the salad.
- Season the vinaigrette with a little vegetable oil or mustard dressing, salt to taste. It is better to add a little salt to the vinaigrette, otherwise it can ruin the delicate taste of boiled vegetables.
- Finely chop the herbs (dill, basil, parsley) and add them to the salad.
- For a change, you can prepare a vinegar dressing for the vinaigrette - for this you mix vegetable oil, vinegar, salt, sugar and ground pepper.
