Cumin seeds, also known as cumin, are a traditional oriental spice. It quickly gained popularity among many Russian chefs due to its characteristic nutty aroma and original, slightly bitter taste. Zira is usually used in recipes for meat dishes, as well as components of universal marinades.
Spicy beef with cumin
If you love hot grilled meats, then beef tenderloin with cumin will delight you with its richness of taste. The cumin seed will give a hot dish a unique aroma. For 300 g of beef, take the following set of ingredients:
- soy sauce (1 tablespoon);
- rice wine (1 tablespoon);
- table salt to taste;
- vegetable oil (3-4 tablespoons);
- garlic (2 cloves);
- grated ginger (1 teaspoon);
- onion feathers (1 bunch);
- red chili (1 pod);
- ground cumin to taste.
Cut the beef tenderloin thinly across the grain into strips, then marinate at room temperature in a mixture of soy sauce, rice wine and table salt. After 15-20 minutes, heat refined vegetable oil in a cast-iron pan and fry the beef on both sides for 2 minutes.
Then add finely chopped chili peppers, grated ginger and crushed garlic to the meat. Add vegetable oil if necessary and cook the beef for another 1-2 minutes. Remove the meat from the pan, place in a serving dish and sprinkle with chopped cumin and finely chopped onion feathers.
To grind cumin seeds yourself, heat them in a dry frying pan and grind them in a blender.
Universal seasoning: cumin in marinade, sauce, dressing
Shredded cumin is often used in salad dressings with grains such as rice or bulgur. The original hot-spicy gravy can be used for other appetizer dishes, including salads from meat and seafood. The recipe for salad dressing with cumin will include the following components:
- freshly squeezed lemon juice (3 tablespoons);
- natural bee honey (1 teaspoon);
- ground cumin (1 teaspoon);
- olive oil (¼ glass);
- table salt to taste;
- hot red pepper ground (on the tip of a knife).
Scald the lemon with boiling water, pierce it with a knife and squeeze the juice into an enamel bowl. Add bee honey, spices and herbs. Whisk all the ingredients with a broom, while gradually pouring refined olive oil into the spicy-spicy mixture in a thin stream. Cool the finished dressing and use to flavor salads.
The shish kebab will acquire a nutty flavor if the meat is pre-soaked in marinade with cumin. To prepare a spicy liquid, mix the following components (for 150 g of any meat):
- soy sauce (90 g);
- vegetable oil (20 g);
- cumin to taste;
- a mixture of spices for barbecue to taste.
In such a marinade, the meat slices should be soaked for 3-4 hours. Place them in a cool place, but do not freeze.
Any meat dishes, including minced meat products, will become juicier with a spicy sauce. Here are the ingredients for one of the simplest cumin gravies:
- garlic (2 onions);
- vegetable refined oil (3 tablespoons and a little for frying);
- 0.5 teaspoon each of dry paprika, crushed cumin, chili pepper.
It has been proven that regular consumption of a small amount of cumin improves digestion, vision, heart and blood vessels, and brain activity. It is believed that water infusions of ground cumin increases lactation in nursing mothers.
Peel the cloves of garlic, place in a heated cast-iron saucepan and cover with vegetable oil. Saute the vegetable for 5 minutes over medium heat. Combine the garlic with seasonings and scroll in a blender, and in the process of chopping the ingredients, pour in 3 tablespoons of vegetable oil in small doses. The sauce is ready!
