It happens that ordinary, familiar dishes get bored, and you want to diversify your diet. It’s at such moments that squids come to mind. Those who have never cooked squid dishes and do not know which side to approach them from can be reassured: cooking them is easy and very fast!

- - water 1l
- - salt 1 tsp
- - sugar 1 tsp
- - bay leaves 2-3 pcs
- - black peppercorns 5-7 pcs
- - dill - a few branches
- - vinegar 1 tablespoon

Step 1
First, you need to defrost squid, unless you live in a country where you can buy them fresh. It is best to transfer the squid from the freezer to the refrigerator for this. This is the best way to defrost any food, but also the longest. If you can't wait long, defrost the carcasses at room temperature. To speed up the process even more, put them in cold water. Do not put them in boiling water under any circumstances, because squids cook instantly, and further processing can spoil their taste.
Step 2
I used peeled carcasses, but if you bought unpeeled carcasses, you will need to pull out the transparent rod from them and skin them. To easily separate the skin, you need to pour boiling water over the carcasses. It will instantly begin to curl up, after which the squid must be rinsed with cold water and the remnants of the film skin removed.
Step 3
In order to prepare the marinade, you need to boil water, add salt, sugar, pepper, bay leaf, vinegar to it. Let the marinade simmer for 3 minutes.
Step 4
Place dill sprigs in the marinade before dipping the squid into the marinade.
Step 5
Dip the squid in the boiling marinade, turn off the heat, and cover.
Step 6
After 10 minutes, remove the squid, cool and cut as you like - strips or rings.
