Often, the recipes for pork rolls are similar to one another, but the way it is prepared in Moldova is not baked in any other country. One important feature, it should be cooked in foil. The shank meat according to the Moldovan recipe will turn out to be very juicy, with a delicate taste and incredibly soft.
Required Ingredients:
1. Pork shank, but always with layers of bacon and in the skin - 1 pc. about 1 kg.
2. Pitted dried prunes - 100 g.
3. A mixture of ground peppers - 35 g.
4. Mayonnaise sauce, homemade - 75 g.
5. Garlic cloves - 8 pcs.
6. Fresh needles on spruce branches - 2 pcs. 30 cm in length (can be replaced with a couple of bunches of dill or parsley).
7. Spices, a set of fragrant herbs, salt - to taste
8. Dried sage and mint greens (sold at the pharmacy) - half a teaspoon of each type
9. Butter - 120 g.
10. Fresh mushrooms, you can oyster mushrooms or champignons - 300 g.
11. Medium-sized potatoes - 7 pcs.
12. Fresh lemon - 1 pc.
Recipe
1. In a bowl, combine the following products: a mixture of peppers, peeled garlic cloves, spices, mayonnaise sauce, a set of aromatic herbs, salt, prunes, dried sage and mint greens. With an immersion blender, beat all this into a homogeneous mass.
Rub the shank liberally with the resulting mixture so that there are no spots left on it.
Put the shank in a deep bowl and marinate for 4 hours at room temperature. You do not need to put it in the refrigerator.
2. Spread a large sheet of metal food foil on a baking sheet in which we will bake the shank.
Transfer the marinated shank to a baking sheet covered with foil and line it with spruce branches or other herbs.
Wrap the knuckle in foil so that there are no open sides.
3. Turn on the oven and heat it up to 180 degrees. Put a baking sheet with a pork knuckle prepared and wrapped in food foil in a preheated oven. Leave it in the oven for 3 hours.
4. Cut the butter into several equal pieces in the form of cubes (four can be used) and put in the freezer.
Wash, peel and cut the potatoes into quarters. Fold in the bowl provided for it and add salt.
Wash, peel and cut the mushrooms into quarters.
Squeeze juice from fresh lemon.
5. Remove the baking sheet with the knuckle wrapped in foil from the oven. Do not turn off the oven.
Expand the knuckle or cut the foil from above.
Remove the butter cubes from the freezer and place around the shank.
Arrange the potatoes with mushrooms there.
Put the baking sheet with the knuckle and vegetables back in the oven for half an hour (with the foil open).
6. Pour the prepared shank with potatoes and mushrooms with freshly squeezed lemon juice.
The prepared dish is served immediately, hot.
