It is necessary

  • - pork shank - 500 g (usually shanks weigh more, it is recommended to choose the smallest one in the store);
  • - 2 heads of onions;
  • - 3 fresh carrots;
  • - 10 garlic cloves;
  • - 5 pickled tomatoes (green tomatoes are recommended);
  • - 1 lemon;
  • - 3 tbsp. l. apple cider vinegar;
  • - spices to taste.

Instructions

Step 1

To make the pork knuckle tasty and aromatic, you need to prepare the right marinade. To do this, cut the salted tomatoes into cubes, put them in a plate, if liquid has leaked out of the tomatoes, drain it into a bowl as well.

Step 2

Peel the onion, chop it into thin half rings, cut the garlic (5 cloves) into plates. Add prepared ingredients to a plate with tomatoes.

Step 3

Pour apple cider vinegar over the food. Wash the lemon, cut in half and squeeze ½ of the fruit juice onto the onions, garlic and tomatoes. Mix everything in vain, the marinade is ready.

Step 4

Wash the pork knuckle, discuss, if necessary, scrape with a knife to remove ugly plaque on the skin. Rub a clean shank with salt and your favorite spices. Red pepper, basil, nutmeg go well with meat.

Cut the remaining garlic into 2-4 pieces, depending on the size, and stuff the shank with it. Grate the prepared product with marinade, put in a deep bowl and leave to soak for at least 3 hours.

Wash carrots, peel, cut into strips. You should not rub the vegetable, otherwise it will "disperse" during the cooking process. Squeeze the juice from the remaining half of the lemon, and spice the carrots with the resulting liquid. Leave the vegetable to marinate for 1 hour, stirring occasionally.

Step 7

Take a baking foil, place the pork knuckle with the remnants of the marinade on it. Spread the carrots over the shank. Wrap the foil carefully, it is important that no holes remain.

Step 8

Send the knuckle to the oven, preheated to 180 ° C for 2 hours. If the shank is larger than 500 g, the cooking time will increase. For every 500 g of product, add 30 minutes.

Step 9

It is recommended to serve the pork knuckle baked in the oven with marinade and carrots. The dish is in perfect harmony with mashed potatoes, fresh and pickled vegetables.
