The shank is the upper part of a pork leg. As a rule, jellied meat and first courses are prepared from the front steering wheels. The rear steering wheels have more meat, so they are perfect for main courses. One of the most delicious treats made from pork shank is the whole baked shank in the oven. In principle, there is nothing complicated here, but it's worth it. Your men will surely appreciate this dish. Thanks to the special marinade and spices, the shank is juicy, aromatic and very satisfying.

It is necessary

  • - Pork shank back - 900 - 1000 g;
  • - Garlic - 4-5 cloves;
  • - Mustard - 1 tsp;
  • - Mayonnaise - 1 tbsp. l.;
  • - Honey - 1 tsp;
  • - Ground black pepper - 1 tsp;
  • - Salt - 1 tbsp. l.;
  • - Baking bag.

Instructions

Step 1

Rinse the pork knuckle under running water and dry. Make 7-8 deep cuts in it on all sides. In a small bowl, combine ground black pepper and salt. Rub this mixture over the entire shank, including the skin, paying particular attention to the incisions.

Step 2

Peel the garlic and cut into thin longitudinal plates. Then place them in the incisions and press into the pork flesh with your finger.

Step 3

Let's prepare the marinade for the shank. To do this, mix mayonnaise, honey and mustard in a separate bowl. If the honey is grainy, the mixture must be stirred as thoroughly as possible so that it becomes a homogeneous consistency.

Step 4

Transfer the shank to a bowl and cover it well with the marinade on all sides. Then cover with cling film and refrigerate for 5-6 hours or overnight.

Step 5

When the pork knuckle is marinated, turn on the oven and set the temperature to 160 degrees before cooking. Take a baking bag and place the shank in it. The ends of the bag must be tied with thread or fixed with clips. An important point: there must be enough air in the bag so that the shank is not too wrapped around it. In this case, you do not need to make punctures in the package!

Step 6

Place on a baking sheet or baking dish and place in the oven for 2 hours. After the lapse of time, assess the readiness of the shank visually - it should become a beautiful golden color. We do not take it out immediately. Leave to rest for 30 minutes in the switched off oven to balance out the temperature difference.

Step 7

Remove the finished product from the oven and place on a tray. Cut the bag carefully. The shank, together with the released juice, can be transferred to a separate dish. It is better not to drain the juice. In the future, they can be poured over the meat itself or the side dish that will be served with it. For example, boiled potatoes.

Step 8

The pork shank can be served whole on a platter, overlaid with potatoes and chopped herbs, or you can chop into pieces and arrange in portions.
