White mushroom, or boletus, is considered the king of mushrooms, because dishes with it are delicious, aromatic and nutritious. Mushroom soup made from porcini mushrooms turns out to be tasty and rich.

It is necessary

  • - 400 g of fresh white mushrooms;
  • - 300 g of potatoes;
  • - onions - 1 pc.;
  • - dill, parsley - 1 bunch;
  • - vegetable oil (for frying);
  • - ground black pepper, salt - according to your taste.

Instructions

Step 1

Dried, pickled or fresh mushrooms are suitable for making mushroom soup from porcini mushrooms. Soup made from fresh porcini mushrooms will turn out to be really tasty and aromatic. Sort and wash the mushrooms well, then cut into large pieces. Keep in mind that during the cooking process, the mushrooms usually shrink 2-3 times in size.

Step 2

Pour about 3 liters of water into a saucepan, dip the mushrooms into it, lightly salt and cook for about 35-40 minutes. Foam may form during cooking, do not forget to remove it.

Step 3

Meanwhile, peel the onions and chop finely. In a small amount of vegetable oil, fry the onion until golden brown. Onions can be sautéed or fresh in mushroom soup. Keep in mind that fried onions can overpower the taste of the porcini mushrooms to some extent.

Step 4

Wash, peel and cut the potatoes into small cubes. After 40 minutes, add the potatoes to the soup and cook for 15 minutes. Do not forget to salt and pepper to your liking.

Rinse the dill and parsley and chop finely. Add the onions and herbs to the soup and cook for about 5 minutes more. Let the porcini mushroom soup steep for a while. Serve hot or cold with sour cream.
