A ham maker is a cylindrical tin vessel with fixed springs and a pair of lids used to squeeze pieces of meat and minced meat. A semi-finished product for ham is put into it packed in special baking bags so that the juice does not leak out of the product. But in order to remove excess fat, it is recommended to make thin punctures in the bag, but only in the part that will be on top of the form.

Homemade ham is a wide field for creativity. It is prepared from various meats - chicken, pork, game, turkey, beef - fish, pieces of vegetables and generously seasoned with spices. Sometimes mushrooms or nuts are added. There are two basic rules in the manufacture of ham - at least half of the meat should be minced and it should not be too lean, otherwise the product will turn out to be dry and tasteless. To put the ham in jelly, put gelatin in the minced meat. For a dense consistency, add starch, flour or semolina. The ham is boiled for about 2 hours over medium heat or baked on a baking sheet filled with water at a temperature of 170 to 190 ° C for 1.5 hours.

Grind the minced pork, cut the beef into small cubes with a side of 1 centimeter. Put the meat in a bowl, season with salt, pepper, sugar. Cover the bowl with food grade cellophane and refrigerate for 8-12 hours. Put the pork fat in the freezer.
Pour boiling water over the pistachios, dry and chop. Fry the zira in a dry frying pan and crush it in a mortar. Add nuts, spices, wine to the minced meat and mix the minced meat well. Remove the bacon from the freezer and cut into small cubes with a side no more than 20 mm. Place it on top of the meat and knead again.
Step 4
Pack the minced meat tightly in a roasting sleeve, put it in a ham maker and put it in a pot of water. Let it simmer and simmer over low heat with a gentle simmer for about 2 hours. Refrigerate ham before serving.
