Mozzarella is usually referred to as young, soft cheeses. It is considered a very healthy dairy product. Mozzarella melts easily, which is why it is used in large quantities in the preparation of pizza. Most often it is sold fresh, smoked or heavily smoked. Mozzarella can be bought whole, but most often it is sold already grated or cut into pieces. This and similar cheeses are sold in special bags with brine, since it is in it that this product needs to be stored.

It is believed that the right mozzarella is made exclusively from buffalo milk, but more and more similar cheeses from regular cow's milk are on the market.

Milk for the production of mozzarella is transferred to the cheese dairy no later than twelve hours after milking, where it is contained in a special container until it curdles, then a special rennet is added to it and heated to a temperature of 85-90 degrees. The cheese mass must be kneaded by hand using special wooden sticks, after obtaining a plastic homogeneous mass, pieces of different sizes are separated from it and the cheese is molded.

Fresh mozzarella should be eaten several days in advance. It is stored in brine without sacrificing taste. To make it, you need salt, milk or water. One large spoonful of salt is added to half a liter of water or milk, cheese is put there, covered with a lid or a thick cloth and stored in the refrigerator as such. Salted mozzarella is stored for about a week, unsalted - two to three days.

Mozzarella has a very delicate texture and not too pronounced taste, this is due to the fact that buffalo milk tastes much less sweet than cow's milk, but it is much fatter and contains several times more protein and calcium. This makes mozzarella not only nutritious, but also very healthy product.

One-day mozzarella is considered the most delicious, but it can be tasted exclusively in Italy, in the regions where it is produced.
