Lobio is a beautiful word for a hearty Caucasian dish made from beans. In Georgia, each housewife has her own special recipe for making lobio. We suggest using red beans, ripe tomatoes, nuts, herbs and spices for classic lobio for an authentic taste.

- • Red beans - 300 g
- • Tomatoes 1-2 pcs.
- • Bulb onions 1-2 pcs.
- • Refined vegetable oil - 50 ml
- • Walnuts –2–3 tbsp.
- • Garlic 2-3 cloves
- • Ground red pepper - on the tip of a knife
- • Seasoning "Khmeli-suneli" - 5 grams
- • Fresh herbs (parsley, cilantro, dill) 50 grams
- • Wine vinegar or Tkemali sauce to taste
- • Salt to taste
- • Water - 2–2, 5 liters
Instructions
Step 1
The beans need to be rinsed and soaked in water for several hours, preferably overnight. During this time, it is recommended to change the water 1-2 times. Pour fresh water into a saucepan and boil the beans until soft. First you need to let the beans boil and, reducing the heat to a minimum, cook for about 1, 5, if necessary, 2 hours. If the water has almost boiled away during boiling, then add a fresh portion of water. When the beans are almost ready, estimate the volume of the remaining water and, if you like thicker, do not drain all the water from the beans, pour a little into any container. It may be needed at the end of cooking if the lobio is too thick.
Step 2
While the beans are boiling, prepare the vegetables, nuts, and herbs. Peel the onions, tomatoes, garlic and finely chop with a knife. Separate walnuts from partitions and hard parts, then chop randomly. Rinse the greens under running water, shake off and dry, then cut into small pieces.
Step 3
Heat some oil in a skillet and fry the onions until golden brown. After a couple of minutes, add tomato cubes and crushed garlic to the pan. Heat the mixture over medium heat and add to the beans. Now it's time for chopped herbs, salt and seasonings. Assess if there is enough liquid, add the poured broth to the lobio if necessary. Let the mixture simmer and then turn the mode switch to medium heat. If necessary, add salt again, at the very end add wine vinegar or Tkemali sauce 1-2 tablespoons.
