Lobio is a spicy Georgian dish made from beans with herbs and spices. The food is prepared exclusively from plant products, so it is suitable for vegetarians or people who are fasting. Despite the fact that it will take quite a long time to prepare it, lobio will surprise even avid gourmets with its taste.

You will need:

- beans - 1 cup;

- onions - 2 pcs;

- garlic - 3-4 cloves;

- walnuts - 2 tablespoons;

- greens of cilantro and parsley - 1 bunch;

- a mixture of peppers, hops-suneli - to taste;

- vegetable oil;

To prepare the dish, we soak beans (it is better to take red or striped beans) overnight in cool water. In the morning we drain the water, rinse the beans several times, fill with cold water and cook until tender (no need to add salt). This usually takes 45-50 minutes. Drain the finished beans through a colander, leave the broth.

Peel the onion and garlic and cut into small pieces. Heat oil in a frying pan, pour onion and garlic into it and fry over high heat for 2-3 minutes, stirring all the time. Transfer the vegetables to a bowl and let cool. Then we pass the fried vegetables along with the nuts through a meat grinder.

Rinse the greens, chop very finely and grind in a bowl (or mortar) until the juice appears.

Pour the beans into a separate bowl, add the herbs, spread the mass of onions, garlic and nuts. Add hot spices and mix. If the mass is very thick, dilute it with the broth in which the beans were cooked. We leave the lobio to infuse for an hour and a half, and then serve.
