Lobio is a very popular dish in Georgia. Lobio denotes both the name of the bean and the dishes prepared with it. In the preparation of lobio, you can use any (white or colored), as well as green beans.
Green Bean Lobio
You will need:
- green beans - 500 g;
- onions - 2 pcs.;
- tomatoes - 3 pcs. (or tomato paste - 2 tbsp. l.);
- garlic - 3 cloves;
- sunflower oil - for frying;
- hot red pepper - to taste;
- fresh herbs (basil, cilantro, dill or parsley).
Wash the green beans, then cut into small pieces and boil.
Meanwhile, while the beans are cooking, you need to make the sauce: wash the tomatoes, then blanch and chop finely with a knife. Peel the onions and chop very finely, fry in a little sunflower oil, then add tomatoes or tomato paste to it and simmer the contents of the pan for 5-7 minutes. Also, don't forget to add any spices of your choice.
Combine the contents of the pan with the green beans, then cool and add hot peppers and garlic, crushed with a garlic press. Wash any fresh herbs (parsley, cilantro, basil or others) and chop finely. Sprinkle with these herbs with lobio.
Lobio, made from green beans, goes well with meat dishes.
You can also use canned beans in this recipe.
The beneficial properties of green beans are known: it is a very non-nutritive product that contains a large amount of vitamins of groups A, B, C, as well as folic acid and minerals (iron, zinc, potassium, calcium and others), as well as protein, carbohydrates, sugars, etc. fats.

Red bean lobio
You will need:
- red beans - 150 g;
- garlic - 5 cloves;
- walnuts - 100 g;
- vegetable oil - for frying;
- red hot peppers, coriander seeds;
- fresh herbs (basil, parsley, dill, cilantro).
The beans are prepared in a traditional way: it is best to cover them with water in the evening. If you don't have much time, then you can speed up this process and pour boiling water over the beans several times. In this case, the beans should stand for 3-4 hours.
Rinse the prepared beans, cover them with water again and bring to a boil over medium heat. Cook for another 10 minutes, then drain, rinse, cover again with fresh water and cook until tender.
Then you can do it in two ways: the finished beans can be crushed, and also left intact.
Grind the kernels of walnuts or any other nuts with a blender and add to the red beans. Allow the beans and nuts to cool slightly, then add olive oil, chopped garlic and herbs, and any seasonings you like.
This lobio is good to serve with meat dishes, it also goes well with table wines and fresh juices.
