Lobio is a delicious Georgian dish made from beans prepared in a special way. Beans help to saturate the body with protein. So if you're fasting or just respecting legumes, you should definitely try this amazing meal. It can be used as a separate dish or as a snack.
It is necessary
- - Red beans - 1 kg;
- - Soda - 1 pinch;
- - Medium onions - 2 pcs.;
- - Garlic - 4 cloves;
- - Dill - 1 bunch;
- - Tomato paste - 1 tbsp. l. (optional);
- - Ground black pepper;
- - Acetic essence 40% - 0.5 tsp;
- - Salt;
- - Vegetable oil for frying - 4 tbsp. l.
Instructions
Step 1
Sort the beans and rinse several times. Then pour it into a saucepan and pour 2 liters of cold water. Bring to a boil, add baking soda, then lower the temperature to a low setting, cover and cook until the beans begin to burst.
Step 2
To cook the beans faster, add a little cold water several times during cooking, bring to a boil, and reduce the temperature again. When ready, drain the water and rinse the beans and transfer to a bowl.
Step 3
Peel the onions and cut into thin half rings. Take a frying pan, pour in vegetable oil and heat it up. Add chopped onion and sauté until golden brown. Optionally add tomato paste and fry everything together for 3 minutes, stirring occasionally.
Step 4
Chop the garlic finely or crush through a press, and chop the dill. Place them in a bowl next to the beans, add vinegar, black pepper and salt to taste. When the onion and tomato are cool, transfer them from the pan to the bowl and mix well. Lobio is ready! It can be served both warm and after cooling completely.
